Akashi Tai have been rice traders since the 1600's; it was in the early 1900's that they started producing sake. While sake is frequently known as rice wine, the process is actually more akin to making a strong rice beer. One of the main flavour differences with sake is how it has been milled. Akashi Tai Honjozo has been milled to 65%, producing a medium bodied, rather than heavy style of sake.
