Based in the heart of Aÿ, Champagne Bollinger's wine-making tradition extends all the way back to 1829. Their core release named 'Special Cuvée' beautifully encompasses this tradition, as well as Bollinger's rich and decadent style of sparkling wine. Special Cuvée is a result of delicate blending of harvests and a high portion of reserve wine stored in their cellars in magnums, some for more than 15 years. The grape varieties that make up the assemblage are 60% Pinot Noir, 25% Chardonnay and 15% Meunier, and over 85% of the grapes come from Grand Cru and Premier Cru vineyards. Moderate dosage (8-9g/l) beautifully balances the Champagne and gives it its well-rounded finesse.

Nose – A beautiful aromatic complexity; ripe fruit and spicy aromas; hints of roasted apples, compote and peaches.

Palate – A subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut.
