Distilled in pot stills at the St Nicholas distillery in Barbados, with the helping advice of Richard Seale. Made exclusively from sugar cane syrup, distilled in pot stills and aged in ex-bourbon barrels. The resulting character is slightly vegetal and grassy but also very elegant and reminiscent of pastries, puddings and other decadent desserts. Each bottling of St Nicholas Abbey is a single cask release, meaning there will be subtle differences from batch to batch. Exciting to see a distillery rarely spotted in the UK due to their relatively small production.
