A wonderfully mature 17 year old Islay single malt from Caol Ila Distillery, independently bottled by Duncan Taylor as part of its celebrated The Octave range.
Distilled in 2008, the whisky was matured for 17 years before being given a finishing period in a small Palo Cortado sherry octave cask. The increased interaction between spirit and wood brings an extra layer of richness and complexity while retaining Caol Ila's distinctive combination of peat smoke, citrus and coastal character.
The nose offers sweet peat, green tea, smoke and liquorice with a touch of black pepper. Following the octave maturation, richer notes of dark toffee and orchard fruit emerge alongside gentle peat, bonfire embers and subtle oak.
The palate balances Caol Ila's maritime smoke with rich sherry sweetness, ripe fruit and warming spice, leading into a long finish of smouldering peat, oak and lingering toffee. Bottled at 52.5% ABV, this highly limited single cask release produced just 83 bottles.
