One of the most intriguing and nerdy spirit releases we have seen in a while. Little Brown Dog have bottled this small batch 'High Rye Spirit', distilled at Invergordon distillery. It is 7 years old, matured in new American oak casks, and the mash bill contains wheat, corn, barley and rye.
It is classified as a spirit and not a grain whisky because enzymes were added during fermentation - a common practice in other countries to increase the sugar yield and thus conversion by yeast. Under Scotch Whisky Association rules, this means it cannot be classified as Scotch Grain Whisky (we're putting it in our Grain Whisky category to avoid putting it in Vodka and confusing everyone).
Essentially, the production process was very similar to one that would produce a high Rye content bourbon in the US. But instead it was done by a an industrial powerhouse on the Cromarty Firth.
