For this Thompson Bros Blended Malt, the brothers have combined the different malts in a small toasted 1200 litre European oak vat (around the size of two large casks). The aim when creating this blended malt is something full bodied, with waxiness, fruit with peatiness at the base. This then goes in to their vat to integrate.
Each time they bottle, they take a maximum of two-thirds of the spirit, leaving the base within the vat as the starter for the next batch.
Everything from the process, from the vatting to bottling strength of 48.5%, all done with flavour and fullness of body in mind.
