Distilled from a blend of estate grown Espadin and Madrecuishe agave, Pensador Ensamble is a product of two production runs, each occuring in different parts of the year. During the cooler months, the firmentation takes longer and produces lighter citrus notes, while the firmentation that happens during the warmer months produces a spirit that is earthy and rich. When combined, the result is a complex and well-balanced artisanal mezcal.
