The Spirit of Yorkshire distillery, on the Yorkshire coast, are perfectly postioned to make excellent whisky. Growing excellent barley on their farms, brewing excellent beer at their Wold Top brewery, they then took this to building a distillery. To help them along the way, they had the late, great Dr Jim Swan advising them initially.
One of the casks that Dr Swan pioneered was STR casks, which in this case are ex red wine casks, which have been shaved, toasted and re-charred reducing the tannin from the red wine, while bringing fruit, sugar and spice to the fore.
