For one month of every year, Torabhaig gives their distillers free reign to create their own whisky, deciding everything including barley, yeast, fermentation length, peat, cut points and cask type. The final whiskies are then bottled for the 'Distiller's Series'.
This bottling is the first expression from Iona, which uses 10% chocolate malt, longer fermentation time, and a low cut point for an unpeated spirit. It was matured in a combination of first fill bourbon and refill sherry butts.
